A classic Jambalaya recipe featuring chicken, shrimp, and sausage.

Sear the chicken in a heavy wide skillet on medium heat. There should be some fond buildup.

Add the sausage and vegetables and saute.

Add the seasoning and rice and mix to combine.

Add chicken stock and optionally shrimp and simmer until rice is almost done and shrimp is cooked through. Let sit for 10 minutes for the rice to continue steaming then fluff and serve.
