Sausage and Dill Soup

A hearty winter season soup. Dill seed accents sausage, kale, and root vegetables.

Ingredients
- black pepper, a few good grinds
- 4.0 carrots, medium, about a pound
- 4.0 cup chicken stock
- 0.5 teaspoon coriander
- 1.0 teaspoon dill seeds
- 4.0 garlic cloves
- kale, lacinato works best, one full bunch
- 1.0 pound kielbasa, or other smoked cured sausage
- 0.5 cup leeks
- olive oil, for finishing
- 2.0 red potatoes, medium sized, about a pound
- 1.0 teaspoon salt
Directions

Brown the sausage in a heavy pot, like a 5qt dutch oven.

Add the carrots, sliced into small rounds or quartered then the leeks, diced, and cook until softened. Add minced garlic, coriander, and dill seeds and stir gently, cooking until fragrant.

Add the potatoes and kale and stir in well then fill with stock and water until covered. Add the salt and pepper.

Simmer until potatoes are soft then top with a spiral of olive oil and serve.
