Cheesy Broccoli and Chicken

Chicken and broccoli sit on a bed of cheesy rice. While most casseroles are pale and soggy, this casserole retains distinct layers.

Preheat oven to 350F.

Either render the skin or use a heavy tbsp of olive oil. Saute chicken on one side to brown, there should be fat left in pan. Remove chicken and set aside.

Saute the onion and red pepper until a bit brown. Add rice and mix and add seasoning. Grease a 9x5 casserole dish.

Add the rice and onion mixture, then 1 cup of cheddar, the broccoli (stems diced, heads chopped roughly) and chicken, top with the other cup of cheddar then pour the 2 cups of chicken broth evenly over the whole casserole.

Tent with foil and bake for one hour, remove the top and bake an additional 15 minutes. Let rest 15 minutes before eating.

The middle cheese layer will dissolve into the rice and give it a really cheesy rice flavor. This is more of a dry casserole. If the rice in the middle is not fully done, add 2 tbsp of water in the middle and let it rest.
