Cheesy Broccoli and Chicken

Chicken and broccoli sit on a bed of cheesy rice. While most casseroles are pale and soggy, this casserole retains distinct layers.

Ingredients

Preheat oven to 375F.

Simmer the rice in the chicken stock until the liquid is almost completely absorbed.

Sear chicken well, there should be a nice brown crust. Remove chicken and set aside and slice when cool.

Grease a 9x5 casserole dish.

Add the rice, then 1/2 of the cheddar, the chicken, the broccoli, then top with the rest of the cheddar.

Bake for 30 minutes until the cheese has browned. Let rest 15 minutes before eating.
Note

The middle cheese layer will dissolve into the rice and give it a rich, cheesy rice flavor. This is more of a dry casserole. If the rice in the middle is not fully done, add 2 tbsp of water in the middle and let it rest.
