A take on a popular boxed dinner, this dish incorporates Texmex flavors for a hearty easy family dinner.

Ingredients
- 1.0 bell peppers,
- 2.0 tablespoon butter,
- 1.0 pound cheese, cheddar or similar
- 0.5 teaspoon cumin powder,
- 4.0 garlic cloves,
- 0.5 teaspoon garlic powder,
- 1.0 pound ground beef, 80/20 is best
- 1.0 onions,
- pasta, penne or elbows or similar
- pepper, a few grinds
- 1.0 teaspoon salt,
- 1.0 teaspoon smoked paprika, hot if possible
- 0.5 teaspoon thyme,
Directions
-
Boil the pasta with enough water to cover when finished (cover the pasta and add another half).
-
Dice and brown the onion and bell pepper then sear in a wide skillet, set aside.
-
Brown the ground beef in the same skillet then turn off the heat and add the garlic and seasoning. Set aside.
-
When the pasta is done, pour all of the water into the pan with the ground beef. Boil until the liquid is mostly evaporated, about a cup of water left.
-
Turn off the heat and add the butter until melted. The mixture should be brownish and thick. Shred the cheese (see note) and mix a handful at a time until melted fully.
-
Add back to the pot of pasta and mix gently. Add the onions and peppers and mix then serve.
Note
-
Use your favorite hamburger seasoning mix instead of the spices (aside from the paprika). Adjust salt accordingly.
-
Use fresh shredded cheese. Pre-shredded cheese does not melt properly.
