A base component to French dishes, a common mirepoix is celery, onions, and carrots simmered until soft but not browned.

  • Dice all ingredients then sweat in a pan until all vegetables turn soft. For sauces and other finely textured foods, sweat until the carrots begin to break apart. For soups and stews that benefit from the texture, sweat until onions just turn translucent.
