What is better than fried things or risotto? Fried risotto! These risotto balls are soft and gooey inside with a crispy exterior. Try them with tomato sauce.

Follow the directions for risotto then chill in the refrigerator overnight. Best as a use for leftover risotto.

Shape the risotto into balls or patties. Dip into the egg mixture then the breading. While the risotto balls rest, heat the oil in a high sided pot until it registers 350F. There should be enough oil to barely cover the risotto balls. Fry each ball or fritter in the oil until golden brown then remove.

Best served with some marinara sauce and basil.

It's good to not make the risotto itself too fatty, like extra butter and cheese, so it will hold together better when fried.
